Description

Frittatas are perfect for using up whatever you have on hand. Bake eggs with vegetables and cheese on a sheet pan for an easy, mess-free dinner.

Ingredients:

  • 6 large eggs
  • 1 cup spinach, chopped
  • 1 bell pepper, diced
  • 1/2 cup onion, diced
  • 1/2 cup cheese (cheddar or feta)
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Sauté onions and bell peppers until soft.
  3. Add spinach and cook until wilted.
  4. In a bowl, whisk together eggs, cheese, salt, and pepper.
  5. Pour the egg mixture over the vegetables in the skillet.
  6. Cook for 5 minutes, then transfer to the oven and bake for 15-20 minutes until set.
