- 6 large eggs
- 1 cup spinach, chopped
- 1 bell pepper, diced
- 1/2 cup onion, diced
- 1/2 cup cheese (cheddar or feta)
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Sauté onions and bell peppers until soft.
- Add spinach and cook until wilted.
- In a bowl, whisk together eggs, cheese, salt, and pepper.
- Pour the egg mixture over the vegetables in the skillet.
- Cook for 5 minutes, then transfer to the oven and bake for 15-20 minutes until set.
