Instructions
- Heat sesame oil in a large skillet over medium heat.
- Scramble the eggs until fully cooked, then set aside.
- In the same skillet, add mixed vegetables and cook until tender.
- Add cooked rice, soy sauce, and scrambled eggs; combine.
- Cook for an additional 5 minutes, stirring occasionally.
- Garnish with green onions before serving.
