Egg Fried Rice

Description

This one-pan meal combines cooked rice with scrambled eggs, soy sauce, and vegetables. It’s perfect for weeknights.


Ingredients

Scale
  • 2 cups cooked rice
  • 2 large eggs
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 green onions, chopped
  • 2 tbsp. soy sauce
  • 1 tbsp. sesame oil
  • Salt and pepper to taste

Instructions

  1. Heat sesame oil in a large skillet over medium heat.
  2. Scramble the eggs until fully cooked, then set aside.
  3. In the same skillet, add mixed vegetables and cook until tender.
  4. Add cooked rice, soy sauce, and scrambled eggs; combine.
  5. Cook for an additional 5 minutes, stirring occasionally.
  6. Garnish with green onions before serving.
